Healthy food recipe
Chicken Curry and Wild Rice Salad
4 boneless, skinless chicken breasts, poached and cut into pieces
2 cups wild rice, soak overnight
4 carrots, diced
3 stalks of celery, diced
¼ to ½ cup of currant
¼ cup of raw sliced almonds
¼ cup of raw sunflower seeds
4 green onions, chopped
½ - 1 cup veganaise or light mayonnaise
3 tablespoons light soy sauce
1 teaspoon curry powder
1 teaspoon turmeric
1 teaspoon lemon or lime juice
Salt and pepper to taste
1. Cool chicken and allow to cool. Prepare rice according to the instructions on the package.
2. Mix all ingredients together and add dressing.
3. Refrigerate and allow to cool.
4. Ready to serve.
